Introduction

Ingredients

    Crust:
    flour
    olive oil
    salt
    water (0.25 - 0.5 cup, very cold)

    Filling:
    red bell peppers
    yellow bell peppers
    green bell peppers
    mushrooms
    spinach (frozen cooks up better in this)
    shredded cheese (your favorite, cheddar is what I used)
    eggs

Tips

I used frozen spinach because it stirred in with the eggs so much better than fresh leaf spinach. This took about 30 minutes to cook but my oven is a little wonky. Keep an eye on your food.
This is great even as leftovers and cold.


Directions

For the crust:
mix flour and salt in a bowl (with a fork)
mix up oil and water in a cup
stir oil / water mix into flour & salt mix and stir until mix is thick and can be spread into a greased pie tin
spread around the edges as well as the bottom

For the filling:
beat eggs in bowl
add in all vegetables and cheese
stir
pour into crusted pie pan

Cook for about 30 minutes at 350 degrees. Side crust will be slightly browned and top will look cooked. Be sure to check for complete cooking all the way through if you are not sure it is cooked in 30 minutes. Egg should feel spongy and nothing should leak out the top.
