    5 tsp evoo (extra virgin olive oil)
    4 oz packed spinach
    2 (6 inch) whole grain pitas, halved horizontally
    2 large plum tomatoes, thinly sliced
    4 large eggs
    14 tsp salt
    1/4 tsp pepper
    2 oz reduced fat feta cheese crumbled


heat oven to 450 F
In a large skillet, heat 1tsp of oil over medium heat, add spinach in batches if necessary, and cook until wilted, 2-3 minutes.
Brush inside of each pita with 1tsp of oil, place pita rounds oiled side up on a large baking sheet and bake until starting to brown, about 5 minutes, remove from oven.
Divide tomatoes and spinach evenly among pita halves, leaving an empty space in the center of each for an egg. Crack 1 egg in the center of each pita. Sprinkle with salt and pepper, return to the oven, bake until yolks are lightly set, 8-10 minutes. Sprinkle with cheese and continue baking until cheese has softened, about 2 minutes.

  • We made this morning, right out of South Beach Diet cook book. But we added a deli slice of turkey also. So good! - 1/3/12

  • If this is the same Greet-the-Sun-Breakfast Pizzas as in the South Beach Diet Taste of Summer Cookbook, the amount of salt should be 1/4 (0.25) tsp, not 14 tsp. Also the only ingredient included in the nutritional information is 1 egg, which leaves out the other ingredients. - 2/27/09
