Ingredients

Zucchini, 1 1/2 cup, shredded
Egg, fresh, 2 large
Applesauce, unsweetened 2/3 c.
Brown Sugar, 1/2 cup
Granulated Sugar, 1/2 cup
*Flour, white, 1 cup
*Wheat flour, 1 cup (or use all white)
Cinnamon, ground, 3 tsp
Cloves, ground, 1/8 tsp
Vanilla Extract, 2 tsp
Baking Powder 2 tsp
Salt, 1 tsp
Tips
I tried replacing the sugar with Splenda, but they did not turn out sweet enough. A 1/2 and 1/2 mix may work better, but at 85 calories each, I didn't think it was worth it.
Directions
Mix the sugar, eggs, vanilla and applesauce until smooth.Add the zucchini and stir. Add the cloves, nutmeg and cinnamon and mix to combine. Add the Baking soda and salt to the flour and then mix the dry into the wet.
Scoop by 1 oz. scoops into greased muffin pans (I use Pam) and bake at 425 degrees for 10 to 14 min (until just brown on top) It will make exactly 24 1 oz. muffins.
