Number of Servings: 6

Ingredients

    1 medium butternut squash
    3 carrots
    1 small sweet potato
    1 medium chicken breast
    1 cup or fresh corriander
    1 tsp red thai curry paste
    1 tin reduced fat coconut milk
    700mls boiling water

Directions

1: Peel vegetables and put in large pot
2: Chop chicken and add to veg
3: Add corriander and curry paste
4: Cover with boiling water, put lid on pot
5: bring to boil then reduce heat and simmer for 30 mins
6: check veg are tender
7: add coconut milk
8: blend until lump free
