    Turkey Picadillo

    1 pound ground turkey, 93% lean
    1 cup onion, chopped
    2 apples, peeled and chopped
    1/4 cup raisins (optional)
    2 Tbsp sliced pimiento stuffed olives
    1 Tbsp mild jalapeno peppers, diced
    1/4 tsp pepper
    1/4 tsp ground cinnamon
    1/8 tsp ground cloves
    1-14.5 oz. can diced tomatoes, no added salt
    1-8 oz. can tomato sauce, no added salt
    1 c Brown rice
    2 cups chicken stock, chicken broth, or vegetable broth (fat-free, low sodium)


Bring stock to a boil add rice, reduce heat and simmer covered for 20 minutes or until liquid is absorbed. While rice is cooking, sauté turkey and onions in a medium nonstick skillet, when turkey is browned and onions are tender add apples through tomato sauce to the skillet. Cover and simmer for 15 minutes. Stir occasionally. Serve over brown rice.
