    Chicken Breast, no skin, 36 ounces (6-6 oz pieces), flattened
    Olive Oil, 1 tbsp
    *Peppers, sweet, red, fresh, 1 cup, sliced
    Onions, raw, 4 tbsp chopped
    Carrots, raw, 1 cup, grated
    *Philadelphia Fat Free Cream Cheese, 8 oz
    Salt, 1 tsp, divided
    Pepper, black, 1/8 tsp


Heat oven to 425 degrees. In a medium frying pan, heat the oil. Add the red pepper and cook until they start to soften. Add the onion and carrots and cook 2 minutes longer. Add the cream cheese and 3/4 tsp. salt and pepper.

Place the chicken breasts in a roasting pan and sprinkle with remaining salt. Divide the cream cheese mixture evenly over the chicken. Bake until the chicken is done, 25-30 minutes
