    Slow Cooker Balsamic Chicken

    4-6 chicken breasts, boneless, skinless (1 1/4 lb)
    2-14.5 oz. can diced tomatoes, no salt added
    1 onion thinly sliced (not chopped)
    4 garlic cloves, smashed
    1/2 cup balsamic vinegar
    1 tsp each: dried oregano, basil, and rosemary
    1/2 tsp dried thyme
    salt and pepper to taste


Coat bottom of slow cooker with cooking spray. Salt and pepper each breast and place in slow cooker. Add sliced onions on top of chicken breast. Sprinkle chicken and onions with dried herbs and smashed garlic. Pour in vinegar and top with tomatoes.
Cook on high 4 hours, serve over your favorite grain. Great with farro!
