    1/2 cup quinoa, uncooked
    3 oz light cheddar cheese, grated
    1.5 cups spinach, chopped
    1/2 carrot, chopped
    1/4 green bell pepper, chopped
    1/4 jalapeno, finely chopped
    1-2 garlic cloves, diced
    1/2 shallot, chopped
    1/2 tsp cumin
    1/4 tsp salt

    1 egg
    1 tsbp flour

    1.5 tsp canola oil (to oil muffin pans)


Preheat oven to 350 degrees.

Cook quinoa per package directions.

Meanwhile, mix in bowl all other ingredients (except oil). Add quinoa and stir together.

Drop into muffin tin, press down. Bake for approx. 25 minutes.


Serving Size: Makes 8 regular sized muffin-sized bites
