    3 tablespoons olive oil
    5 chicken thighs
    Garlic, 5 cloves
    Onions, raw, 1 cup, chopped
    Red Ripe Tomatoes, 3 cup, chopped or sliced Salt, 1 tsp
    Pepper, black, 1 tsp
    *Coriander ground seed, 1.5 tsp
    *Cumin ground seed, 1.5 tsp
    Peas, frozen, 1 package (10 oz)
    Parsley, 1 cup chopped


Add oil to large heavy soup pot. Add onion and garlic to saute for 3-5 minutes. Add chicken and cover to brown. Add spices and heat till fragrant. Add tomatoes and simmer for 15 minutes. Add peas and bring back up to boil to simmer for at least 15 minutes. Add parsley during the last five minutes of cooking. Salt and pepper to taste. Some squeeze leamon juice over top to serve. Traditionally eated with french bread
