    1 Tbsp Olive Oil
    2 Cloves Garlic, minced
    1 Medium Onion, diced
    2 Stalks Celery, chopped
    1 Parsnip, chopped
    1 Tbsp Thyme, dried
    1 Tbsp Parsley, dried
    1 Tbsp Sage, ground
    1 Ham bone or ham hocks
    4 Cups Ham, diced
    1 lb Navy Beans (white beans)
    1 lb Lentils
    7 Cups Chicken Broth
    2 Cups Water


Make sure to soak the white beans so they are ready for cooking. I prefer the overnight method but you can quick soak as well. Follow the instructions on the package of beans.
Place ham bone and diced ham in 8 quart crockpot on low. On the stove, heat olive oil in a saute pan. Add garlic, onions, celery and parsnip. Sprinkle with parsley and thyme. Saute on medium high until onions are translucent. Add to crockpot on top of ham. Mix sage into chicken broth till dissolved. Add chicken broth and beans. Cook for 6 hours on low in the crock pot. During the last (7th) hour of cooking, add the lentils and two cups of water. Make sure to stir occasionally to allow all the ingredients too cook thoroughly.
