    2 TBS egg beaters
    1 TB grated parmesan

    1/4 cup balsamic vinegar
    2 TBS olive oil
    3 cloves garlic
    salt & pepper to taste

    2 cups cooked brown rice (about 1 cup uncooked)

    1 cup leftover pork loin, chopped fine
    1 cup petite peas, thawed
    1 cup red onion, minced


You can add any other leftover veggies you like to this. Tomatoes, peppers, cucumber, anise. Whatever you have on hand.


Scramble together egg beaters & parmesan until set

Whisk together oil and vinegar in a large bowl. Add garlic, salt, and pepper

Mix rice with dressing. Stir to toss

Add pork, peas, and onions. Mix well.

Serve at room temperature
