    1/2 box (9 noodles) lasagna
    1 jar marinara sauce
    4 large portabella mushrooms, diced
    1 cup fresh spinach, chopped
    1 cup ricotta cheese
    3/4 cup mozzarella cheese, shredded
    1/2 can artichoke hearts
    2 tbsp sun dried tomatoes
    1/4 large onion, diced
    1 garlic clove, minced
    1/2 cup parmesan cheese, grated
    1 tbsp olive oil


Cook lasagna noodles according to package directions.
Spray 13x9 pan with cooking spray.
Put olive oil in pan and cook mushrooms, onion and garlic until onions slightly translucent
Combine ricotta, 1/4 cup mozzarella, 2 tbsp of parmesan, sundried tomatoes and artichoke.
Add cooked mushroom mix to artichoke cheese mix.
Put one layer of noodles down
Add one layer of cheese mix.
Add 1/3 of marinara.
Add 3rd layer of noodles
Add remaining marinara
Cover with remaining mozzarella and parmesan
Cover with foil and bake at 350 for approx 30 minutes.
