    add the juice of one lemon and 1/2 cup chopped parsley to finish


Gluten-free, vegan entree


Soak rice for 10 minutes in cold filtered water

Saute onions 3 minutes and then add eggplant on med - high heat

Saute for 5 minutes, adding spices to taste

Add chopped chard, saute for 5 minutes, add drained rice and toss all for 5 minutes

Add 2 1/2 cups of boiling water, bring all to a boil then reduce to simmer, cover and cook for 15 minutes

Serving Size: Makes 8 servings
