Number of Servings: 10

Ingredients

    1 cup celery
    1 med onion
    1 large red bell pepper
    1 14 oz can chicken
    8 oz uncooked elbow pasta

    sauce
    1 cup lemon or orange juice
    1/2 peanut butter
    1 tbs honey
    1/4 cup vineagar
    1tbs red curry
    1 tbs mayo

Tips

cut some calories and omit the honey and mayo


Directions

cook pasta al dente
meanwhile dice onion, celery and peppers
then place all ingredients for sauce in mixer until well blended.
When pasta is done drain and run under cold water mix vegetables and chicken and sauce until well blended
eat or chill in refrig for a hour or two
