Introduction

Ingredients

    1/2 large cucumber, peeled
    1 tablespoon dried dill (or 2 tablespoons fresh dill)
    1 teaspoon fresh garlic, minced
    1/2 teaspoon fresh ground black pepper
    1/2 teaspoon salt
    8oz fat-free plain Greek yogurt
    Juice from half a small lemon

Directions

Chop cucumber into a small dice, as small as you'd like. (I like mine chunky.) Throw it into a bowl. Add minced garlic, dill, salt, and pepper. Stir to combine. Add yogurt to bowl and stir to combine once more. Stir in juice from the lemon. Tastes best if you let sit for a few hours for the flavors to marry. Enjoy!

Serving Size: Makes 16 servings of 2 tbsp each
