    Artichoke Quarters, 1 cup
    Veganaise, 2 tbsp (or mayo of choice)
    Parmesan Cheese, shredded, 2 tbsp
    4 slices sourdough bread


Chop artichoke hearts. Mix in Veganaise and cheese. Spray one side of each slice of bread with cooking spray (I like Crisco Olive Oil Spray). Spoon mixture onto ungreased side of two slices of bread. Top with ungreased side of other two slices. Cook, weighted, in skillet or cook in panini press until bread is browned.
