    12 oz of bacon chopped
    1 med head of cabbage - chopped
    1 med onion - cut in half and sliced
    1 16 oz can diced tomatoes
    2t salt
    2t black pepper
    3 cups of chicken broth


Goes great with homemade cheese biscuits. If you need more meat, Portuguese sausage, linguica makes a good side (but it has a lot of fat).


Cook bacon in a large kettle until slightly crisp. Add onions and cook until soft. Add cabbage and cook until starting to soften. Add tomatoes and half the broth. Stir up the bits of bacon from the bottom of the pan (deglaze). Add the remaining broth, salt and pepper.

Cook for about 2-3 hours adding water as needed.

Serving Size: makes about 8 1 1/2cup servings
