    1 lb. dried lentils
    1-1/2 qt. cold water
    2 cans diced tomatoes
    2 cups diced onion
    1 clove garlic
    3 cup each zucchini & summer squash
    1 cup carrots sliced
    1 lb raw shrimp, peeled
    4 T. olive oil
    Salt, pepper, cummin, allspice to taste (approx. 1 tsp each)


Cook lentils, water & salt for one hour til tender
saute carrots, squash, crushed garlic in 1/2 oil add to pot then add tomatoes
saute onion in other 1/2 oil util deep golden brown remove onions, add shrimp to oil and saute until pink
turn all into soup Cook another 20 minutes Season as desired
