Ingredients

    24 oz pork sirloin, cubed into 1/2 to 3/4 inch cubes
    1/2 t black pepper
    1 cup carrots, peeled and cut into 3/4 inch rounds
    2 cups onion, diced
    1/2 10 oz. package frozen mixed vegetables
    3 small potatoes, peeled and large chopped
    10 oz Ro Tel tomatoes with green chilis, canned
    3 oz. tomato paste
    4 c water
    4 tablespoons beef base
    1 T Pico Pica hot sauce (optional, or to taste)

Directions

Spray a large, heavy dutch oven with nonstick cooking spray. Add cubed pork to sear. Lower heat to medium. Add carrots, onions, potatoes and mixed veggies to the saucepan; cook for 5 minutes. Add tomatoes and tomato paste to the pot. Slowly add the water and beef base. Bring to a boil and then reduce to a simmer. Simmer for 15 minutes. Add Pico Pica hot sauce (optional, to taste); continue to cook for about three minutes.
Makes 9 one cup servings.
