Ingredients

    1/2 pound reduced-fat or turkey sausage
    2 small onions, cut into eight wedges
    2 cups water
    1 (6.2 oz pkg) fast-cooking long-grain and wild rice (Uncle Ben's)
    1/2 tsp dried oregano
    1/4 tsp crushed red pepper
    1 cup frozen small green peas, thawed

Directions

Coat a large skillet with cooking spray and heat over medium heat. Add sausage and cook apx three minutes or until browned, stirring often. Remove sausage from pan and keep warm.

Separate onion wedges into layers. Spray pan again with cooking spray and saute onion for apx three minutes or until browned, stirring frequently.

Increase heat to high, add water and bring to a boil. Add rice, seasoning packet, oregano and bell pepper. Return to boil, cover, reduce heat, and simmer four minutes or until most liquid is absorbed. Stir in sausage and peas. 4 servings, 1.75 cups
