    Crackers - Glutino Gluten Free (1 envelop = 2 servings)
    OR 16 Ritz crackers
    Adobo Powder, 1 tsp
    Chili powder, 1 tsp
    Salt, 1 tsp
    Butter, unsalted, 2 tbsp (melted)
    Tilapia filet, 4 4-oz
    Butter, finishing, 1 tbsp (divided)


Original recipe called for Ritz crackers


Crush crackers (place in zip-top plastic bag and use a rolling pin)
Add Adobo, chili powder and salt, mix well
Place cracker mixture in medium bowl and add melted butter, mix well
Spray a 19x12x2 baking dish with olive oil
Place Tilapia in baking dish
Divide finishing butter so small thin pats are on several spots on the filets
Sprinkle cracker mixture over filets
Bake at 375 for 15-20 minutes
