    15 Large cleaned shrimp
    1/4 Cup of chopped onion
    1 cup julien red bell pepper
    1 teaspoon grated ginger
    1 Tablespoon oil
    1/4 Cup cocunut milk (may substitute with lite)
    1/2 Tablespoon peanut butter
    1 packet of Splenda
    1 Tablespoon of cayenne hot sauce
    Salt and pepper to taste
    Cilantro for Garnish


Heat oil add onion garlic and shrimp sautee for 1 minute then add red pepper and and minced ginger. Cook untill pepper is done about 2-3 minutes. Add cocunut milk, cayenne hot sauce, splenda, and peanut butter stir untill well blended. Take off heat salt and pepper to taste and garnish with Cilantro
