Ingredients

2 cups dry pinto beans (cook w/ water)
3 cups cooked short grain brown rice
12 oz lean ham, in chunks
1 onion, chopped
1 cup chopped celery
3 cloves garlic, minced
1t olive oil
1 t salt
Directions
9 servings, 1 cup each
Cook the pinto beans, add 1t salt. Drain most of the extra water.
Saute onion, garlic, and celery until tender. Use 1t olive oil - add approximately 1/4 c chicken broth and continue to simmer. Chunk the ham. Add rice, ham, and onion mixture to beans.
