    3 (4-5 oz) skinless chicken breasts
    1/2 a medium to large onion, chopped roughly
    4 small potatoes (the recipe calls for red potatoes, but I used white) cut in 1-inch cubes
    1 small butternut squash, peeled, seeded and cut in 1-inch cubes
    garlic, salt and pepper to taste
    1 large orange, cut in 1/4-inch rings
    2 cups sodium-free chicken broth
    1 TBSP honey
    about 2 TBSP thyme


Cut the chicken into bite-sized chunks and season (if desired) with salt, pepper and garlic. In the bowl of a slow cooker, combine chicken, onions, potatoes, squash, orange, broth, honey and thyme. Set the slow cooker to high and cook, covered, until the vegetables are tender and chicken is cooked through, at least 2 1/2 hours.
