    1/2 c. butter, unsalted
    1/2 c. fresh asparagus, peeled and cut into 1" pieces
    1/2 c. chopped red pepper
    1/2 c. chopped orange pepper
    1/2 c. chopped yellow pepper
    1/2 c. chopped onion
    2 c. fresh spinach
    1/2 c. heavy cream
    6 large eggs
    1/2 c. shredded Colby Jack cheese
    2 T. chives
    2 T. parsley


Add sausage or bacon for a meaty frittata - still low carb!
Serve with sour cream and/or salsa.
Cut into 1/8's and serve as an appetizer.


In a large skillet on medium heat, saute asparagus, red, orange, and yellow pepper, and onion in butter until slightly tender. Add spinach and continue to saute for 1-2 minutes, until spinach is tender. In a bowl, whisk cream and eggs thoroughly and poor over veggie mixture. Cover and reduce heat slightly. Do not stir. When egg starts to set, top with cheese, chives, and parsley. Recover and cook until set. Cut into 4 wedges and enjoy!
