Ingredients

    2/3 c. uncooked instant brown rice
    6 medium green bell peppers
    1 pound lean turkey
    1 small onion, chopped
    2 14.5 oz cans no salt added diced tomatoes
    2 garlic cloves, minced
    1/4 t. ground black pepper

Directions

Preheat oven to 350 degrees. Cook rice according to package. Fill large pot with water and boil. Cut off the tops of peppers and remove seeds. Place peppers in boiling water and boil for 5 minutes. Drain. Brown turkey and onion in pan. Add brown rice, tomatoes, garlic, and pepper. Fill peppers and cook in covered dish for 30 minutes.
