    1 whole boneless skinless chicken breast
    1 can of black beans
    1 can of diced tomatoes with chipotle
    1 small onion chopped


Can also be done with frozen chicken breast, increase cooking time by 1 to 1 and a half hours.


Spray crock pot with non-stick cooking spray and place chicken in pot. Add chopped onion, black beans and tomatoes. Cook on low for 5 hours.
