Ingredients

    1/2 cup margarine, softened
    1 cup sugar
    1 egg
    1 cup shredded zucchini
    2 cups flour
    1 tsp baking soda
    1/2 tp salt
    1 tsp ground cinnamon
    1/2 tsp ground cloves
    1 cup semisweet chocolate chips

Tips

For something healthier or something different, here are some subs: 1/2 cup applesauce instead of margarine, 1 cup brown sugar instead of white, add extra zucchini, use whole wheat flour, 1 cup raisins instead of chocolate chips (or 1/2 cup each).


Directions

Cream together margarine & sugar until smooth, beat in egg, stir in zucchini. Combine flour, baking soda, salt, cinnamon and stir into wet mix. Mix in chocolate chips. Cover dough and chill 1 hour. Bake 8-10 minutes at 375F.

Serving Size: Makes 36 cookies.
