    4 Small skinless, boneless Chicken breasts
    1 tsp dried oregano, ground
    2 cloves of garlic, minced
    1/4 tsp salt
    1/8 tsp ground black pepper
    1 tbsp Extra Virgin Olive Oil
    3/4 cup Quinoa
    1.5 cups Reduced-Sodium Chicken Broth
    1 cup Sliced Carrots
    1 6.0 oz jar Marinated Artichoke Hearts, drained & chopped
    1/4 cup Kalamata Olives, sliced
    2 tbsp Fresh Italian Parsley
    1/4 cup Green Onions, sliced or chopped


1. Preheat oven to 375.
2. Mix garlic and oregano and saute in skillet w/ olive oil. Season chicken w/ salt and pepper. Cook chicken for 3-5 minutes or until chicken is browned on both sides.
3. Place Skillet with chicken in oven. Bake uncovered for 20-25 minutes until chicken is cooked thoroughly.
4. While chicken is in oven, wash and drain quinoa with cold water. Combine quinoa and chicken broth in med sauce pan and bring to boil. Reduce heat and cover. Simmer for 12-5 minutes. Stir in carrots and cook covered for 2 more minutes. Remove from heat and let stand for 10 minutes
5. Stir in artichoke hearts, olives, and parsley into quinoa. Sprinkle w/ green onions and serve.
