    1/2 large head of cabbage, sliced
    3 small onions, diced
    1 red bell pepper (medium or large), diced
    1.5 cups already cooked rice
    2 15 oz cans of white beans
    1 small can sliced mushrooms
    1 large can diced tomatoes
    3 cups spaghetti sauce
    1.33 cups mozzarella cheese


Spray skillet with olive oil cooking spray. Add onion and pepper and saute until softened. Remove from heat. Add the canned mushroom, diced tomatoes, cans of beans, and the rice. Mix together. Slice half a head of cabbage into thin strips. Spray a casserole dish with olive oil cooking spray. Place sliced up cabbage in the bottom of the casserole. Pour the rice, beans and veggies mixture over the cabbage. Cover the mixture with 3 cups spaghetti sauce. Cover with foil and bake in a 375 degree oven for about 80 minutes. Remove foil, sprinkle with 1 and 1/3 cups mozzarella cheese and return the pan to the oven for another 10 minutes or until cheese is melted.
