    Beef & Barley Soup

    1 pound, ground beef 93% or leaner
    1/2 cup onion, chopped
    2 cloves garlic, minced
    1-46 oz. can V8 juice (low sodium)
    1-14.5 oz. can crushed tomatoes
    1/3 cup pearled barley
    1 cup carrots, sliced
    3/4 cup celery, chopped
    1/4 tsp black pepper
    1/2 tsp oregano
    1/2 tsp basil
    1 bay leaf
    8 oz. frozen peas, if desired


In a large nonstick soup pot brown ground beef over medium to high heat, add onion and garlic and cook for 5 minutes. Add V8 juice, crushed tomatoes, 2 cups water, barley, carrots, celery and spices to the meat mixture. Bring to a boil, reduce heat to a simmer, and cover. Simmer about 30 minutes until barley and vegetables are done. Add frozen peas and optional add-in vegetables. Return to a simmer for about 8-12 minutes. Adjust salt and pepper to taste.

Optional Add-ins:
2 cups chopped washed greens, such as spinach, kale, or swiss chard
2 cups sliced mushrooms
