Ingredients

    Greek Style Couscous Salad

    1 cup dry whole wheat couscous
    3/4 cup chicken broth or vegetable broth, fat free & low sodium
    3/4 cup orange juice
    2 tsp olive oil
    1 Tbsp fresh lime juice
    1/2 cup grape tomatoes, cut in half
    1/4 cup green onions, chopped
    1 cup cucumber, chopped
    1/4 cup fresh oregano, chopped
    1/2 cup feta cheese, crumbled, reduced fat
    Salt and pepper to taste



Directions

Bring stock and orange juice to a boil. Add couscous and stir. Remove from heat and cover pot tightly. Let stand 5 minutes or until liquid is absorbed by couscous. In a small bowl add lime juice, drizzle in olive oil while whisking to combine. Set aside. Remove lid from the couscous and fluff with a fork. Add chopped vegetables and drizzle with dressing. Add cheese and oregano and season with salt and black pepper if desired. Refrigerate and serve cold.
