    Mexican Couscous

    3/4 cup whole wheat couscous
    3/4 cup onion, chopped
    2 fresh garlic cloves, minced
    1 tsp olive oil
    1/2 tsp ground cumin
    1 cup chicken broth, or vegetable broth (fat-free, low sodium)
    3/4 cup whole kernel corn
    3/4 cup tomatoes, coarsely chopped
    2 Tbsp fresh cilantro, chopped


In a medium nonstick, saucepan cook onion and garlic in oil over medium heat until tender. Stir in cumin; cook for 30 seconds. Carefully add broth, corn, tomato and cilantro. Bring mixture to boiling; stir in couscous. Remove from heat. Cover; let stand for five minutes. Fluff with a fork before serving.
