Ingredients

    2 tbsp oil
    1 onion, sliced
    3 cloves garlic
    2 lbs chicken breast
    1 cup water
    1/4 cup lemon juice
    1 cup loosely packed fresh basil
    1/4 cup low fat half & half
    2 tbsp white wine

Directions

saute onions & garlic in oil over medium heat for 5 minutes. Add chicken and cook, turning, to brown each side, about 3 minutes per side. Add water, lemon juice and basil, simmer until chicken is cooked through. Add half & half and wine and cook 1 more minute. Serve over rice.

    This is very good. I used skim Lactaid milk instead of half and half added pepper on one side of the breasts. Although it was very flavorful, I will marinate the chicken in McCormicks garlic and white wine chicken scaloppine next time and add more basil. Thank you for the wonderful recipe! - 7/24/12
