Ingredients

    12 large shrimp
    1 tbsp olive oil
    1 cup sliced red bell pepper
    1 cup sliced onion
    1 tsp thyme, fresh or dried
    1 tsp black pepper
    1 avocado
    4 pita pockets

Directions

Heat oil in large skillet. Add onion and cook for 2 minutes. Add bell pepper. Cook additional 2 mintues. Add shrimp. Cook until firm and pink. Serve in pita pockets with slices of avocado.
