Ingredients
-
3 tablespoons butter or margarine, melted
2 eggs
1 cup matzo meal
1 tsp cinnamon
½ teaspoon salt
½ cup water, or as needed
2/3 cup sweetened condensed milk
2 cups skim milk
1 tbsp honey
1 tbsp instant coffee powder
Directions
In a medium bowl, whisk together the butter and eggs until well blended.
Combine the matzo meal, cinnamon and salt; lightly stir into the egg mixture until the liquid is absorbed, and the meal is damp.
Gradually mix in the water so that the mixture holds together, but is not too wet.
Cover and refrigerate.
Bring a large pot of lightly salted water to a boil.
Using wet hands, shape spoonfuls of the dough into balls. Do not pack the balls together too tightly!
Drop balls into the boiling water, and boil for 15 minutes.
Remove from water.
Let stand on wire rack 10 minutes.
Combine the sweetened condensed milk, skim milk, honey and coffee powder in a saucepan and heat, stirring with a wire whisk, until steaming. Do not let boil.
Place an equal amount of the matzo balls in 6 dishes.
Ladle some of the sweet milk over each dish and serve immediately.
