Number of Servings: 10


    Whole Wheat Flour, 2 cup
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Granulated Sugar, .25 cup
    Cinnamon, ground, 1 tsp
    Nutmeg, ground, .5 tsp
    Flax Seed Meal (ground flax), 2 tbsp (optional)
    Banana, fresh, 1 cup, mashed (3 small)
    Applesauce, unsweetened, .5 cup
    Egg white, 3 beaten
    Vanilla Extract, 1 tsp


Preheat oven to 350 degrees.
In a large bowl, mix flour, baking powder and soda, sugar, cinnamon, nutmeg and flax meal.
Add mashed banana, applesauce, egg whites, and vanilla. Mix until incorporated. Pour into a loaf pan sprayed with non-stick spray.
Bake for 40-50 minutes, or until a toothpick inserted in the center comes clean. Makes 10 slices.
