    1 Giant or other mushrooms weighting 150g
    1/3 large can tomatoes
    1 cup scallions
    0.5 cup green pepper
    1 oz (Blue) cheese crumbled or grated
    1 tsp olive oil


Heat oven to 200 degrees C
Place mushroom in an ovenproof dish flat side downwards.

In a pan place teasppon of olive oil and the scallions, cook for a few minutes, add the pepper and cook a further minute add the tomatoes and bring to the boil. Season & add herbs to taste.

Pour the mixture into the upturned mushroom. Grate or crumble the cheese over the top.

Cook for 15 - 20 minutes.

Bet you need a slice of bread for the juices!
