Introduction

Ingredients

    2 tbsp pumpkin puree
    1 tbsp unsweetened vanilla almond breeze
    1 slice light whole-wheat, high-fiber bread, such as Orowheat
    1/4 cup liquid egg whites
    1/8 tsp pumpkin pie spice
    1/8 tsp cinnamon
    1/4 tsp vanilla extract
    1 packet stevia (to sprinkle on top)

Directions

Combine pumpkin, almond milk, egg whites, spices and vanilla and mix very well.
Meanwhile, toast bread.
Spray a large microwavable mug with cooking spray (lightly), and break up piece of toast into small pieces into the mug.
Pour pumpkin mixture over the bread and stir to coat.
Microwave for 2.5 minutes (or until pudding is thoroughly set). ENJOY!
