Number of Servings: 4


    Zucchini, 2 large
    Onions, raw, 0.5 cup, chopped
    Bread crumbs, dry, grated, seasoned, 0.5 cup
    Olive Oil, 4 tbsp
    Paprika, 1 tsp
    Old Bay Seasoning, 1/4 tsp
    Cooking spray - such as Pam


The trick is to make a semi-dry mixture - so add the olive oil a bit at a time until the mixture is moist but not soggy -


Pre-heat oven to 425 F
Cut zucchini in half length wise
Without breaking the skin, scoop out the insides of the zucchini - leaving a hollow shell
Chop the scooped out zucchini and place into a mixing bowl -
Add the chopped onion
Add the bread crumbs
Add Old Bay Seasoning
Add the olive oil
Stuff the Zucchini shells with the mixture
Shake paprika on top to lightly cover
Spray top with Cooking Spray
Place on a metal cooking sheet
Cook for 15 minutes until tops are lightly brown
Place oven on Broil - and cook for an additional 5 minutes -
Watch carefully that the tops don't burn - You want a crisp and nicely browned top -
