    Butter or vegetable oil spray

    2 cups flour

    2 tablespoons sugar

    2 tablespoons baking powder

    teaspoon salt

    1 cup whole milk

    2 large eggs, separated, yolks lightly beaten


Heat pan to medium-high and prepare with either a pat of butter or vegetable oil spray.

In a bowl, combine flour, sugar, baking powder and salt. Add milk and egg yolks and stir until just combined (batter will be lumpy).

In separate bowl, whisk egg whites until foamy and doubled in volume. Gently fold whites into batter.

Drop -cup portions of batter into hot pan. Flip after bubbles appear in centers and edges look dry. Cook an additional 2 to 3 minutes and serve.
