    2 Tb oil sesame oil divided
    1 lb lean ground turkey
    6 scallions chopped and divided
    2 garlic cloves minced
    1 Tb ginger minced
    4 cups reducedsodium chicken broth
    3/4 water
    3 cups sliced bok choy
    8 ounces dried cellophane noodles
    3 Tb reduced sodium soy sauce
    1 TB rice wine vinegar
    1 sm cucumber, peeled and cut into match sticks for garnish


Heat 1 TB oil in large saucepan over medium heat. Add ground turkey and all but 2 Tb of scallions, garlic and ginger and cook until turkey is no longer pink and is broken up into pieces. Transfer mixtrue to plate.
In same saucepan add broth, water, bok choy, noodles, soy sauce, vinegar and reamining 1 Tb oil to pot. Bring to boil and coove over medium high heat, stirring occasionaly, until the noodles are tender 3-5 minuts. Return turkey mixture to pot and heat thru. Serve with remaining scallions and cucumber
