    Grilled Salmon with Ginger Orange Mustard

    4 (6-ounce) salmon fillets (about 1 inch thick)
    1/4 cup fresh orange juice
    1/4 cup soy sauce, reduced sodium
    1/4 cup cream sherry
    1/4 cup dijon mustard
    2 Tbsp fresh ginger, peeled and grated
    2 Tbsp honey


In a small bowl, whisk together all ingredients except salmon. Combine salmon and marinade in a large plastic bag; seal and marinate in refrigerator 30 minutes. Remove salmon from bag, reserving marinade. Prepare grill or broiler. Place salmon on grill rack or broiler pan coated with cooking spray. While fish is cooking, place remaining marinade in a saucepan; bring to a boil.
Cook salmon 6 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with reserved marinade.
