    Garlic Lime Marinated Pork Tenderloin

    1 small or 11/2 lb pork tenderloins
    3/4 cup fresh lime juice
    1/4 cup olive oil
    2 tsp ground pepper
    1 tsp salt
    1 tsp cumin
    1/2 tsp cayenne pepper
    4 Tbsp honey
    3 Tbsp dijon mustard
    2 tsp fresh garlic, minced
    2 tsp lime peel, grated


Whisk all marinade ingredients together. Set aside of marinade and in a small saucepan bring to a boil, reduce heat and simmer as pork is cooking. Pierce pork with a fork. Combine remaining marinade and pork tenderloins in a large plastic bag. Let marinate at least 30 minutes. Coat grill with cooking spray; preheat. Put the tenderloins on the grill; turning occasionally (be careful not to char pork). Roast until meat thermometer reaches at least 160 degrees. Remove and cover with foil and let stand for 10 minutes. Serve sliced tenderloin with heated marinade.
