Number of Servings: 4

Ingredients

    2 tsp grated lemon rind
    1/4 cup fresh lemon juice
    1 tblsp olive oil
    4 (6 oz) skinless, boneless chicken breast halves, halved crosswise
    Cooking spray
    1 tsp oregano or less*
    1/2 tsp rosemary or less* (* These can be on taste)
    1/2 tsp fresh black pepper
    12 black olives, sliced
    1 large red onion, sliced thin
    1 lemon, sliced thin

Directions

1. Preheat oven to 400 degrees.
2. Combine first 4 ingredients in a large zip-lock bag. Add chicken, seal and shake to coat chicken. Marinate 15 minutes at room temperature. Arrange chicken in a broiler safe glass or ceramic dish coated with cooking spray. Sprinkle chicken evenly with oregano and next 4 ingredients. Top with lemon slices. Bake for 20 minutes.
3. Remove chicken from oven. Heat broiler.
4. Place chicken 3 inches from broiler and broil for 3 minutes till chicken is browned and done.
