    Cajun Pork Chops & Spicy Beans

    4 boneless pork chops (about 1 1/4 pounds)
    2 tsp cajun seasoning spice
    1 red onion, chopped
    1 sweet red pepper, chopped
    1-15 oz. can black beans, drained (do not rinse)
    1-8 oz. can corn niblets, no-salt-added, drained
    2 Tbsp barbecue sauce


Season both sides of each pork chop with 1 tsp cajun seasoning. In a large, nonstick saucepan, over medium to high heat brown chops on both sides about 3 minutes per side. Add onion and pepper around meat; cover and turn down heat to medium low and let simmer for 7-10 minutes. Stir in remaining spice mixture; cook 1 minute. Add black beans, corn and barbecue sauce; simmer 2 to 3 minutes or until heated through.
