    Baby Bellas, 2 oz
    Beets, fresh, 1.5 cup
    Cooked Quinoa, 1 serving =.25 cup dry, 0.5 cup
    Chickpeas (garbanzo beans), 1 cup
    Flax Seed, 2 tbsp
    Chia seeds, ground, 1 tbsp
    Whole Foods Nutritional Yeast, 1 tbsp
    Oregano, ground, 2 tsp
    Ground cumin, .33 tbsp
    Onions, raw, 1 cup, chopped
    Garlic, 3 cloves
    Salt .5 tsp
    Fennel seed, .5 tsp


They taste like a spicy sausage when cooked. I ate these with spaghetti noodles and spaghetti sauce.


Preheat oven to 350 degrees.
Chop up beets, onion, and garlic.
Place everything in the food processor and mix until combined, not completely ground. The mix should still be a bit chunky.
Let the mixture sit while you cover two cookie sheets with wax paper.
Form balls with the mix using a tbsp. Place on the wax paper. I was able to get 28 balls.
Bake for 35 minutes.
