    Chicken Breast, no skin, 1 breast, bone and skin
    Spinach, fresh, 2 cup
    *Laughing Cow Light blue cheese wedge
    Parmesan Cheese, grated, 1 tbsp
    *cream cheese weight watchers, 1.5 tbsp
    Salt, 1 dash
    Pepper, black, 1 dash


This was good, my picky eaters liked it too. I used the cheese I had on hand - most any white cheese would be good in this.


Pound the breast with the flat side of a meat mallet into the thinnest layer you can make without breaking it.
Add Salt and pepper to the beaten breast, then flip it over.
Add all other ingredients to a chopper/food proccessor and pulse until it creates a paste.
Spread this on the chicken breast and then roll the chicken breast, so it is longer, rather than thicker. Don't push it or mash it because it squirts out. If you have left over paste, spread it on top of the roll and around the sides.
Bake in a covered dish for one hour, then let the meat set for 5 minutes with the cover off.

Slice and serve!
