    1/4 cup Stevia
    3 T Cornstarch
    1/8 tsp Salt
    2 cups Skim Milk
    1/4 cup Egg Substitute
    1/2 tsp Vanilla Extract


Combine the Stevia, cornstarch, and salt in a saucepan and mix well, then gradually wisk in the milk, making sure to smooth out any clumps

Heat the mixture over medium heat, stirring constantly, until it starts to simmer, then remove from heat

Put the egg substitute into a separate small bowl and pour about a half cup of the milk mixture into the egg and mix well, then pour the mixture back into the milk

Heat everything over medium heat, stirring constantly, until it boils and then continue cooking for another minute

Remove from heat and stir in the vanilla, then pour the pudding into a bowl or individual ramekins and immediately cover with plastic wrap, making sure the plastic wrap lays directly on top of the pudding. Place the bowl or ramekins in the refrigerator and allow to cool for at least two hours, longer if possible.
