    Preheat oven to 400*

    In a large bowl, mix:
    1 cup milk
    1 tbsp lemon juice
    1 cup oats
    and let stand for 15-45 mins to rehydrate oats.

    In a separate bowl, measure:
    3/4 cup white flour
    3/4 cup whole wheat flour
    1/2 cup brown sugar
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp nutmeg

    Into the oatmeal mixture, mix:
    3/4 cup applesauce
    2 large eggs
    1-2 Tbsp water, if needed.

    Add dry mix to wet, and stir until just moistened. Add water if mixture is too thick. Fold in blueberries, and fill giant muffin tins 3/4 full.

    Bake until a toothpick inserted in centre comes out clean - approximately 25 mins.


Serving Size: Makes 8 really big muffins
